6/29/01 I noticed a recent Washington Post article extolling the virtues of bison meat.  They quoted a chef of some renown who did a direct comparison of loin and tenderloin cuts from beef and bison.  Both were brushed with olive oil, seasoned with salt & pepper, and cooked.  The beef was pan seared for three and a half minutes, the bison for two and a half (due to it's lower fat content), then both were placed in a 500 degree oven for ten minutes, and then allowed to "rest" for three minutes.   Taste testers pronounced the bison superior in every aspect.  It lacked the "greasy" taste of the beef, had no "gamey or wild" flavor whatsoever, and in fact had a "sweet" flavor. 
Of course, this comes as no surprise to us here at Cowboy HeavenBison on Montana's Flying D Ranch Consulting.  We've long been enamored with bison, not just from a meat standpoint, but at the risk of offending my many ranching friends and relatives, they just make a lot more sense than cattle.  They are perfectly adapted to the environment, are easier on the range, and require much less care.  There is that fencing issue, though...You also don't just up and herd them anywhere you want, but given the vastly higher potential returns over beef, the benefits far outweigh the problems, in our opinion.
Given the Washington Post's reputation as less than a proponent of gun ownership and hunting, I highly doubt many of their readers would think about going out and harvesting their own bison, but....We think maybe they ought to!  Let's face it, if you want to get into moral ambiguity, using a hired killer to provide you with meat is perhaps of more questionable integrity than going out and doing it yourself.
So, to that end, and big part of what we've been doing lately is booking bison hunts on the 113,000+ acre Flying D Ranch here in Montana.  The cost on the dry cows and yearlings is eminently reasonable, about what you'd pay for beef, and you're getting a natural product that's a far cry from the hormone and steroid laden product served up the the giant agribusiness corporations that dominate the food industry today.  For details, check out our relevant page.
